Pornstar Martini with Devil's Staircase Gin

⁠A twist on the most searched cocktail - the pornstar martini.⁠  Adding a popcorny element through some pine nut orgeat, it's fun, fruity and easy to understand why the original is so popular.⁠  The original Pornstar Martini was created by bartender Douglas Ankrah at London’s Townhouse bar in the early 2000s.  Some say he was inspired by the smell of a stripper's perfume, some that thought it was what a porn star would order.  Either way it has become an absolute classic and one of the most asked for cocktails in the world.

Devil's Staircase gin from Pixel Spirits is the choice for this drink. It is named after an infamous pass which lies on the West Highland Way between Altnafeadh and Kinlochleven in Glen Coe (west coast of Scotland).  The Devil’s Staircase was  initially given its name by the soldiers who were part of the road building programme of General Wade in the 1720s. The carrying of building materials up that stretch of the road was not popular!  The name was then perpetuated by workers at the nearby Blackwater Dam who had to struggle back up the staircase to get back to their lodgings after an evening in the pub!  It’s an amazing walk with stunning views on a good day and in an exceptionally beautiful part of Scotland.

The gin has got bags of spicy flavours in it with cardamom, citrus and nutmeg on the botanicals list. Bottled at 42% it's delicious with some ice and tonic but equally delicious in a fruity cocktail where it can stand up to some equally bold flavours.⁠  We’ve done a lot of tasting session with it and it regularly comes out as the favourite on the evening.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠

🍸 50ml Devil's Staircase gin⁠
🍸 20ml Pine Nut Orgeat*
🍸 30ml Pomegranate juice⁠
🍸 20ml lime juice⁠
🍸 Egg whites⁠
🍸 Lemon peel express⁠

🍸 * Pine Nut Orgeat:  Toast 200g of pine nuts in a frying pan until golden brown. Blend in a food processor and infuse in a syrup of 300ml water and 600g golden caster sugar over night.⁠
🍸 Add all to a shaker and add the coil of a Hawthorne strainer. Shake without ice for 30 seconds.⁠
🍸 Remove coil and fill with ice. Shake again until frosty.⁠
🍸 Cut off some lemon peel, strain drink into coupe and express lemon oil over surface. Light with a match if you're feeling brave.⁠
